Ingredients: 1lb ground turkey; ½ cup onion; ½ tsp minced ginger; 1 tsp garlic; ¼ cup chicken stock or water; 2 cups of chopped kale; 2.5 cups of chopped or shredded veggie mix of whatever veggies you have on hand. I used: carrots, sweet pepper, chard, cabbage, brussel sprouts; ¾ cup Thai peanut sauce or whatever Asian inspired sauce you prefer (ie-teriyaki, hoisin, etc); 2 Tbsp Coconut aminos, liquid aminos, tamari, or soy sauce; 1 Tbsp cooking oil
